Fall Harvest Gorgonzola and Apple Salad

So, is the fresh broccoli, Brussels sprouts, radicchio, cranberries, pumpkin seeds, kale, and creamy poppyseed dressing found in our Sweet Kale Chopped Salad Kit not enough flavor for you? That’s impossible to believe, but that doesn’t mean we’re not open to new ways to dress up some of our most beloved Chopped Salad Kits.  

This exceptional recipe from our like-minded culinary friend, The College Housewife, uses ingredients like pink lady apple, pear, pancetta, and tangy Gorgonzola cheese to elevate the makings of our Sweet Kale Chopped Salad Kit to new heights, all while providing a substantial boost of protein, texture, and, of course, loads of flavor. And the best part? There’s absolutely no cooking required.

Ingredients

  • 1 pink lady apple, thinly sliced 
  • 5 oz of crumbled Gorgonzola cheese 
  • 1 pear, thinly sliced 
  • 6 oz of cubed pancetta 
  • 1 cup of Whole Pecans 
  • ½ cup of Pomegranate seeds 
  • 5 sage leaves 

Directions

  1. On a large serving platter, evenly distribute Sweet Kale Chopped Salad Kit and toppings.  
  2. Cut pancetta into cubes and slice the fruit.  
  3. Sprinkle apples slices, pear slices, Gorgonzola cheese, pancetta cubes, pecans, pomegranate seeds and sage leaves evenly over salad. 
  4. Drizzle with dressing just before serving or on the side
