Ingredients
- 1 bag Taylor Farms Green Beans
- 2 Tablespoons olive oil (divided)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1 can (15 oz) chickpeas, drained and rinsed
- Creamy Caesar dressing
- Croutons for topping
Directions
- Preheat your oven to 350°F.
- Toss green beans in 1 Tablespoon of olive oil, salt, and pepper.
- Sprinkle parmesan cheese on a non-stick baking sheet, add green beans on top.
- Roast in the preheated oven for 20-25 minutes, or until green beans are slightly charred/crispy.
- In another pan, add chickpeas with 1 tablespoon of olive oil and salt. Bake both green beans and chickpeas at 350°F for 20-25 minutes until slightly charred/crispy.
- Dress the roasted green beans and chickpeas with Caesar dressing. Top with croutons.
- Serve immediately and enjoy!
DIY Caesar Dressing is Easier Than You Think
Creating a homemade creamy Caesar dressing requires little time and results in an even more delicious dish. And you probably already have most of the ingredients for it!
Here’s what you’ll need:
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 Tablespoons lemon juice
- 1 Tablespoon Dijon mustard
- 1-2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon anchovy paste or 1-2 anchovy filets (optional for a more traditional Caesar flavor)
- Salt and pepper to taste
And here’s how to make it:
- In a bowl, combine mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, and anchovy paste (if using). Stir well until the ingredients are thoroughly mixed.
- Taste the dressing and adjust the seasoning by adding salt and pepper according to your preference. Remember that Parmesan and anchovies contribute some saltiness, so be cautious with the salt.
- For a creamier consistency, you can thin the dressing with a little water or milk, adding a small amount at a time until it reaches your desired thickness.
- Once mixed to your liking, cover the bowl and refrigerate the dressing for at least 30 minutes before serving. This allows the flavors to meld together for a more delicious dressing.
