Ingredients
For the Brussels Sprouts:
- 1 pound Taylor Farms Brussels sprouts, trimmed and halved
- 2 Tablespoons olive oil
- 1/2 cup crumbled goat cheese
- 1/2 cup cooked bacon, diced
- 1/4 cup roasted pistachios, chopped
- salt and pepper, to taste
For the Garlic Aioli Dip:
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
Directions
- Preheat the air fryer to 375°F. In a large mixing bowl, combine the Brussels sprouts with olive oil, salt, and pepper. Toss until they are evenly coated.
- Place the Brussels sprouts in the preheated air fryer basket in a single layer. (You may need to cook them in batches depending on the size of your air fryer.)
- Air fry the Brussels sprouts for 15-20 minutes, shaking the basket or tossing the sprouts halfway through cooking. Cook until they are crispy and golden brown on the outside.
- While the Brussels sprouts are cooking, in a small bowl, combine mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper. Mix until all ingredients are thoroughly combined.
- Remove Brussels sprouts from the air fryer and transfer them to a serving platter.
- Top the Brussels sprouts with crumbled goat cheese, bacon, and chopped roasted pistachios, and serve with garlic aioli dip. Enjoy!
What do I do with my leftover goat cheese?
Goat cheese, with its creamy texture and slightly tangy flavor, is a versatile cheese that can elevate practically any dish. If you purchased some for this recipe, you may have a bit left over—lucky you! And while most of us would be perfectly happy taking care of the remaining portion with some crackers of choice, you certainly have a lot of options at your disposal.

- Stuffed Vegetables: Stuff bell peppers, mushrooms, or zucchini with a mixture of goat cheese, herbs, and breadcrumbs for a flavorful and satisfying side dish.
- Pasta: Toss warm pasta with goat cheese, olive oil, and roasted vegetables for a creamy, no-fuss pasta sauce.
- Baked Dishes: Incorporate goat cheese into baked dishes like quiches, frittatas, or gratins for added creaminess and a more unique flavor.
