Avocado Ranch Tostadas

Just like our other Chopped Salad Kits, it can provide a tasty shortcut to a variety of dishes. In this case, it’s tostada cups! Leave the traditional flat version on the kitchen counter — this recipe creates perfectly portioned tostada cups baked in muffin pans. Fill them with black beans, tomatoes, avocado, and the makings of our Avocado Ranch Chopped Salad Kit, and you’ve got an easy (and portable) weeknight dinner everyone will love (even if it’s just you).

  1. Preheat oven to 425 degrees. Spray cups of a standard size 12-cup muffin tin with non-stick cooking spray.
  2. Using a circle cookie cutter, cut 2 medium circles out of each tortilla. Press each tortilla circle into a muffin cup. Bake for 10-12 minutes, until tortilla cups are toasted and hold their shape.
  3. In a large mixing bowl, toss black beans, avocado, chopped tomatoes, and just the salad base and dressing of the Avocado Ranch Chopped Kit. Divide the tossed mixture between the 12 tortilla cups. Top with cheese and corn from the kit. Serve and enjoy!
