Bacon Caesar Tortellini Pasta Salad Recipe

Reader: Do you like Bacon? Caesar salads? Pasta stuffed with cheese? Yes, of course, you do — that’s why you’re currently reading this. And here’s how it all works: you simply combine al dente cheese tortellini with cherry tomatoes, fresh basil, and the makings of our Bacon Caesar Chopped Salad Kit featuring crisp bacon pieces, parmesan cheese, cheese garlic crouton crumbles, and our delectably creamy caesar dressing. Toss it all together, and you have yourself a versatile, gourmet-level dish that’s absolutely delicious when made fresh, and yet somehow even better after it’s in the fridge for a day. Plus, it’s an easy way to eat bacon, pasta, and cheese, all at the same time!

Ingredients

Directions

  1. Bring a small stock pot of water to a rolling boil. Boil stuffed tortellini according to package directions for an al dente cook time. Drain tortellini and set aside to cool or in the refrigerator.
  2. In a large bowl, add cherry tomato halves, basil leaves, and lettuce mixture from the Bacon Caesar Chopped Salad Kit. Toss well and transfer to a serving platter.
  3. Top salad with cooked tortellini. Top with remaining salad ingredients such as parmesan cheese, bacon pieces, crumble crouton topping, and drizzle evenly with caesar dressing.
  4. Optional: top with extra basil leaves for garnish. Serve right away or refrigerate until serving.

While this recipe is made for pot lucks, barbecues, and summer picnics, you can also add this to your weeknight rotation. It has two unexpected perks: i’s easy enough that kids can help toss everything together, and you can make it at any point in the day and dinner will be ready in the fridge when it’s time to eat.

Serve this alongside grilled BBQ chicken breasts, hamburgers, or make it the main meal and serve with crusty bread or a juicy fruit salad.
