BBQ Chicken Coleslaw Salad

Coleslaw is a crucial part of a barbecue spread. It’s light, cool, crisp, and provides a refreshing balance to some of the smokier, heavier BBQ dishes on the table. And while we fully respect the supporting role coleslaw often plays, we thought it was time to promote it to the main part of the cast by turning into into a main dish. All you need is BBQ chicken and some familiar ingredients like avocado and jalapeño. Ingredients

  • 1 Taylor Farms Coleslaw Salad Kit
  • Cooked BBQ chicken, shredded or sliced
  • 1/2 avocado, diced
  • 1/2 jalapeño, thinly sliced
  • 2 Tablespoons fresh cilantro, chopped
  • 1/2 cup corn kernels (fresh or canned)

Directions

  1. Prepare the Coleslaw: In a medium bowl, empty the contents of the coleslaw kit. Add the coleslaw dressing included in the kit and mix well until the cabbage is evenly coated.
  2. Add the Chicken: Add the sliced or shredded BBQ chicken to the coleslaw mixture.
  3. Top with Toppings: Top with avocado, jalapeño, chopped cilantro, and corn.
  4. Serve: Serve immediately for the best texture and flavor. Enjoy your BBQ Chicken Coleslaw Salad!

Tips:

  • If you prefer a milder salad, remove the seeds from the jalapeño before slicing.
  • This salad can be made ahead of time, but don’t add the avocado until just before serving to prevent it from browning.
