Citrus Crunch Ramen Salad

Sometimes we all crave variety and crunch—and that’s exactly what you get when you sprinkle crushed ramen noodles on a delightfully citrusy salad. This recipe delivers tangy, sweet, and savory ingredients in a refreshing dish inspired by Asian cuisine.

Crunchy ramen noodles, tangy mandarin oranges, and savory edamame add an adventurous touch to our Citrus Crunch Mini Chopped Salad Kit.   1. Crush the ramen into bite sized pieces while still in its packet.
  2. Drain the canned mandarin oranges. 
  3. Salt the edamame and set aside.

Mandarin oranges are known as the “little brother” in the family of oranges, lemons, limes, and grapefruit. Easy to peel and take on the go, they win hearts around the world for their diminutive size and satisfyingly sweet taste. 

Edamame (the Japanese word for “beans on a branch”) are young soybeans harvested while they are still somewhat soft and before they ripen. They are rich with plant-based protein and perfect for vegan diets. Their firm yet soft texture makes them an ideal topping for a crisp salad.

Ramen noodles are made using “lye water” in the flour, which gives them their distinctive texture and off-white coloring. (Lye water is used in cooking bagels and pretzels, too.)  The delicate yet hearty noodles are easy to crumble out of the package and add a crunchy bite to your salad.
