Ingredients
For the Caesar Dressing:
- 1/2 cup mayonnaise
- 2 Tablespoons grated Parmesan cheese
- 2 Tablespoons freshly squeezed lemon juice
- 1 Tablespoon Dijon mustard
- 1 clove garlic, minced
- 2 anchovy filets, minced (optional)
- Salt and pepper to taste
- 1/4 cup olive oil
For the salad:
- 1 Taylor Farms 10 oz bag of Hearts of Romaine
- 1 cup cubed bread (such as French bread or ciabatta)
- 3 Tablespoons olive oil, divided
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Directions
For the Caesar Dressing:
- In a small bowl, whisk together the mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, minced garlic, and minced anchovies (if using) until smooth.
- Season the dressing with salt and pepper to taste.
- Slowly drizzle in the olive oil while whisking continuously until the dressing is well combined and emulsified. Set aside.
For the Salad:
- Preheat your oven to 375°F.
- Place the Hearts of Romaine in a bowl and set aside.
- In a separate bowl, toss the cubed bread with 2 tablespoons of olive oil, minced garlic, salt, and pepper until evenly coated.
- Spread the seasoned bread cubes on a baking sheet in a single layer.
- Bake the croutons in the preheated oven for about 10-12 minutes, or until golden brown and crispy. Make sure to toss them halfway through baking to ensure even browning.
- Once the croutons are done, remove them from the oven and let them cool slightly.
- Add the cooled croutons to the bowl of romaine lettuce
