We absolutely love the Honey Citrus Chopped Salad Kit, and topping it with blackened chicken and golden berries makes us see rainbows. This particular salad kit contains organic chopped green leaf lettuce, kale, and radicchio, and is topped with dried cranberries, crispy quinoa, and feta cheese, then drizzled with our honey citrus vinaigrette.
Golden Berries do, 100%, live up to their name
If you’ve never experienced the sheer joy of unwrapping a golden berry from its papery leaves and popping it in your mouth, please pick up a container of these the next time you see them. They’re also called cape gooseberries, Peruvian groundcherry, husk cherry, and physalis. With 6 grams of fiber per serving and 20% of your daily recommendation of Vitamin C, you may be popping these marble-sized goodies like they’re bon bons. Just save some for the recipe!
If they remind you of tomatillos with their translucent, crisp husks, you’re not far off. Golden berries are related to tomatillos, but are incredibly sweet and tart. They can also be made into jams or dried for snacking later. These special fruits are native to South America and the Andean mountains, and we’ve found that kids especially love unwrapping the husks and twisting off the golden berry to enjoy.
Why is it called blackened chicken? Am I supposed to burn dinner?
In short, no, please don’t. It’s called blackened chicken because it is heavily spiced (often with cajun seasoning) and then cooked over high heat. The spices get dark, the chicken gets cooked (not burned), the juices stay in, and the dinner guests stay happy. We recommend cooking the seasoned chicken for 6-7 minutes per side, and if it smokes a bit, don’t worry. Just open your windows and get ready to dig in!
