Why Blue Cheese is Only Kind-of-Sort-of Blue

Blue cheese, renowned for its strong aroma and distinct blue veins, is a product of the intentional introduction of what’s known as mold cultures. But don’t worry, this is a good mold (it exists!). Thanks to the fervent experimentation of our adventurous ancestors, Penicillium roqueforti or Penicillium glaucum were introduced to cheese at some point, giving birth to those iconic blue veins and a taste that can only be described as “distinctive.” Originating in Europe, varieties like Roquefort, Gorgonzola, and Stilton have become internationally recognized and beloved.

The flavor of blue cheese can range from mildly tangy to sharply piquant, depending on the aging process. Whether you crumble it on a salad, melt it in a dish, or bravely pair it with wine (try a Sauternes or Port), blue cheese is undeniably an acquired taste – and some of us have acquired it by the truckload! Enjoy!
