Ingredients
For the salad
- 1 Taylor Farms Caesar Chopped Kit
- 1/2 pound large shrimp, peeled and deveined
- zest of 1/2 a lemon
- juice of 1/2 a lemon
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 tablespoons chopped fresh herbs of your choice (I used thyme, chives, and parsley)
For the garlic bread
- 2-4 thick slices crusty bread
- olive oil for brushing
- salt and pepper
- 1-2 cloves garlic, peeled
Directions
Salad
- In a medium bowl, combine the shrimp, lemon zest, lemon juice, garlic, salt, and pepper. Stir to combine and let marinate for 15 minutes. Heat a medium nonstick skillet over medium-high heat and add the shrimp. Sauté for 2 minutes or so per side or until cooked through. Finish with an extra squeeze of lemon and stir in the fresh herbs.
- To assemble the salad, place the chopped romaine in a large bowl, and add the cheesy crouton crumble, parmesan cheese, and dressing and toss to combine. Top with shrimp and serve with grilled garlic bread. Enjoy!
Grilled garlic bread
- Preheat a grill pan or outdoor grill to medium-high heat. Lightly brush both sides of the bread with olive oil. Season with a pinch of salt and pepper. Grill for 1-2 minutes per side, or until grill marks appear. While the bread is still hot, rub both sides with a garlic clove, “grating” it into the bread to infuse the flavor. Repeat with all slices of bread.
Your Guide to Herbs
This recipe calls for chopped herbs of your choice. But what if you have no idea what your herbs of choice are? Here are our suggestions for which herbs to choose to make your shrimp flavorful with each bite.
- Parsley
Did your mom tell you parsley had no taste (so just eat it)? Well, you should always listen to your mom, but parsley does have a mild flavor: it’s fresh, grassy, and slightly peppery. When chopped, it not only enhances the taste of your food, but also adds a vibrant green colour to whatever you’re serving.
- Thyme
Apart from winning the award for coolest spelling, thyme gives foods an earthy, slightly minty flavour that adds depth to without overpowering the delicate taste of the shrimp. Strip the leaves from the stems and chopped them gently. This way, the herb infuses its flavour without becoming too dominant.
- Chives
Cute mini onions, chives provide a mild onion flavour that packs a punch. They will enhance the shrimp without overwhelming it. Chop chives finely for a subtle oniony taste. Their bright green colour also adds a nice visual touch.
- Tarragon
Tarragon doesn’t get the attention we think it deserves. Great for chicken salads, pasta salads, and for sprinkling on grilled chicken thighs or pork, tarragon offers a slightly sweet flavour with a hint of licorice. Finely chop tarragon and add it just before serving. (It also works particularly well with creamy or buttery sauces, adding a sophisticated touch to your favorite dishes.)
- Cilantro
If you’re one of the minority who tastes soap when they eat cilantro (what a tragedy!), ignore this. But for most of us, cilantro brings a citrusy, slightly spicy flavor that adds a refreshing note. You’ll often find cilantro in dishes with a Latin or Asian influence, and we can understand why.
- Basil
When you think of a neapolitan pizza with whole leaves atop the melted cheese, you’re thinking of basil. When chopped and added to foods, basil provides a sweet, slightly peppery taste that pairs wonderfully with garlic and tomatoes, making it an excellent choice for shrimp dishes like this one.
- Dill
We’re big fans of dill here at Taylor Farms. Dill has a mild flavour with a hint of anise that complements lemon and butter, which are common flavours in shrimp dishes like ours. Finely chop the fresh dill to enhance the freshness and add complexity to the shrimp.
