Mango Lemonade Salad with Grilled Shrimp Skewers

Shrimp skewers may not be the first thing you think of when pondering a bowl of luscious mangoes.  But this vibrant, savory-sweet recipe provides a pretty compelling argument. Add in the sweet, tart, coolness of lemonade and we have a light, bright weeknight dinner.

  1. Soak the skewers in cold water for 30 minutes.
  2. Set the grill to medium-high heat. Season shrimp with salt and black pepper.
  3. Thread a mango cube onto a skewer, then shrimp, then mango, alternating until no more shrimp can fit on the skewer. Repeat for remaining skewers.
  4. Place skewers on the grill rack coated with cooking spray and cook 3 minutes on each side, or until charred. Remove from heat, squeeze lime wedges over skewers. 
  5. Serve with prepared Mango Lemonade Chopped Salad Kit and remaining lime wedges.
