Ingredients
- 1/2 honeydew melon, peeled, seeded, and cubed
- 1 cucumber, thinly sliced
- 2 ripe avocados, diced
- 1 package Taylor Farms Green & Crisp Blend
- 1 Burrata ball
For the Lemon Vinaigrette:
- 2 Tablespoons freshly squeezed lemon juice
- 2 Tablespoons extra-virgin olive oil
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Directions
- In a small bowl, whisk together the freshly squeezed lemon juice, extra-virgin olive oil, honey or maple syrup, salt, and pepper until well combined. Set aside.
- In a large salad bowl or on individual serving plates, arrange a bed of the Green & Crisp Blend. Scatter the honeydew cubes, sliced cucumber, and diced avocado over the bed of greens. Place the Burrata ball in the center of the salad or divide it into smaller portions if desired.
- Give the Lemon Vinaigrette a final whisk and drizzle it generously over the salad and Burrata. Serve the salad immediately, allowing the creamy Burrata to meld with the refreshing flavors of honeydew, cucumber, and avocado.
