Mexican Street Corn Burger Sliders

When we say these sliders have gone south, we mean it in the best way. Sliders are pretty much everyone’s favorite food, but sometimes they need a flavorful upgrade. We thought a little Southwest kick could be interesting, and tried adding our Mexican Street Corn Chopped Salad kit to the stack. Pile these sliders high with sliced avocado, red onion, grilled jalapenos, tomatoes, and the ingredients from the salad kit. The result is delectable!

Ingredients

  •  Taylor Farms Mexican Street Corn Chopped Salad Kit
  • 6 slider buns
  • 6 small burger patties (beef, chicken, or plant-based)
  • 6 slices of cheese (cheddar or your choice)
  • 2 avocados, sliced
  • 2 fresh jalapeño peppers
  • 1 large tomato, sliced
  • 1 red onion, thinly sliced
  • Smokey paprika cornbread crumbles & crispy corn (from the salad kit toppings packet)
  • Creamy elote dressing (from the Salad Kit)
  • Olive oil or cooking spray
  • Salt and pepper to taste

Directions

  • Grill the Jalapeños: Slice them in half—and if you prefer less heat, remove the seeds. Lightly coat them with olive oil and grill on medium heat until slightly charred and softened. Set aside.
  • Cook the Patties: Season them with salt and pepper, then cook on a grill or stovetop until done to your preference, adding a slice of cheese on top during the last minute to melt.
  • Assemble the Sliders: Toast the slider buns lightly on the grill or in a pan. Spread a small amount of the remaining elote dressing on the bottom bun. Add a handful of the dressed greens from the salad kit. Place a cooked burger patty with melted cheese on top of the greens. Layer a slice of tomato, grilled jalapeño, red onion rings, and sliced (or smashed) avocado. Top with the slider bun and secure with a toothpick if needed.
  • Spice it up: Coat the rim on the layer of avocado with the toppings packet for a smoky, crispy texture.

Serve: Serve the sliders with lime wedges on the side for a zesty kick. Pair with your favorite iced tea or beverage for a complete mea
