Ingredients
- 1 Taylor Farms Mediterranean Crunch Chopped Salad Kit
- 1 large yellow onion, peeled and thinly sliced
- 2 (8.8-oz.) packages naan bread (plain or roasted garlic)
- 1 (10-oz.) container hummus (classic, roasted red pepper, or roasted garlic)
- 1/2 cup sun-dried tomatoes packed in oil, drained and sliced
Directions
- Heat 2 tablespoons of cooking oil in a large skillet over medium. Once hot, add onions and cook for 5 minutes, stirring often, until the onions start to soften. Season with a pinch of salt, reduce heat to medium-low, and continue cooking, stirring every few minutes, until onions are blonde-colored, about 10-15 minutes. Remove from heat.
- Lightly spray naan bread with cooking spray (or brush with oil). Grill both sides over an open flame on an outdoor grill, or on a grill pan over high heat, until lightly charred.
- Spread hummus evenly onto each grilled naan bread. Sprinkle caramelized onions and sun-dried tomatoes overtop.
- Empty contents of the Mediterranean Crunch Chopped Kit into a large bowl and toss with dressing. Spoon salad evenly over each naan bread. Serve and enjoy!
Are Sun-Dried Tomatoes Actually Dried in the Sun?
Sun-dried tomatoes are a deliciously concentrated form of ripe tomatoes that, yes, have been dried in the sun to dehydrate and preserve them. This process intensifies their flavor, resulting in a sweet, tangy, and slightly chewy texture. And you can use them in a lot more dishes than pizza.
Let’s start with another easy idea: Sun-dried tomatoes bring a welcomed burst of intense flavor to pasta creations. When rehydrated, they infuse the dish with a rich, savory dimension you can’t get with other tomatoes. In salads, the tangy chewiness adds a wonderful contrast to crisp greens and veggies, and they make for a zestier topping in classic dishes like bruschetta, providing a unique depth of flavor. Sun-dried tomatoes shine in dishes like couscous, tapenades, and antipasto platters, adding complexity that helps “wake up” the other flavors.
For an aromatic twist, incorporate sun-dried tomatoes into pesto, where their robust flavor enhances the traditional sauce with some added sweetness. You can even use them in stuffed meats like chicken and pork, infusing the proteins with a savory/sweet element that complements strong aromatics such as garlic and onion.
