Ingredients
1 Taylor Farms Hearts of Romaine (or chopped Romaine Hearts)
1 chicken breast, cubed or 1 cup cubed rotisserie chicken
1 apple, Gala or Pink Lady, sliced very thin
3 Tablespoons raw, unsalted pecans
3 Tablespoons cranberries
¼ cup blue cheese
Honey Mustard Dressing Ingredients:
1/4 cup Dijon mustard
2 Tablespoons honey
2 Tablespoons apple cider vinegar
1/4 cup extra virgin olive oil
Salt and pepper to taste
Directions
- Chop cooked chicken breast and set aside (either warm or cold) and thinly slice the apple.
- Arrange the chopped hearts of romaine on a serving plate or in a large bowl.
- In a small bowl, whisk together the Dijon mustard, honey, and apple cider vinegar until well combined. Slowly drizzle in the olive oil while whisking continuously until the dressing is smooth and emulsified. Season with salt and pepper to taste
- Sprinkle the romaine with the chicken, apple slices, pecans, cranberries, and crumbled blue cheese, then drizzle with the prepared dressing.
