Spiced Cauliflower Tacos

In this complicated world, one thing seems to bring everyone together: Tacos! That is, unless you’re a vegetarian (cue the sad slide whistle). It’s time for that to change (cue the happy music). Vegetarians can now join the fiesta with this delectable recipe for Spiced Cauliflower Tacos. You’ll start with the fresh, healthy Taylor Farms Cauliflower florets (rainbow cauliflower works, too!) in place of the meat that would normally go into your tacos. Don’t let the cauliflower fool you: This is a dish that takes advantage of the zesty blend of southwestern flavors, as you’ll be coating and roasting the cauliflower with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper. Ingredients

  • 1 package of Taylor Farms Cauliflower Florets 
  • 2 Tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 8 small corn or flour tortillas
  • 1 cup shredded red cabbage
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup fresh cilantro leaves
  • Lime wedges for serving
  • Sour cream or Greek yogurt for garnish (optional)
  • Salsa or hot sauce for added flavor (optional)
  • Salt and pepper to taste

Directions

  1. Preheat your oven to 425°F.
  2. In a large mixing bowl, combine the cauliflower florets, olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper. Toss to coat the cauliflower evenly with the seasoning.
  3. Spread the seasoned cauliflower florets on a baking sheet and roast in the preheated oven for 20-25 minutes or until the cauliflower is tender and slightly browned.
  4. While the cauliflower is roasting, warm the tortillas in the oven or on a stovetop.
  5. Assemble the tacos: Place some roasted rainbow cauliflower on each tortilla, then top with shredded red cabbage, diced tomatoes, diced red onion, and fresh cilantro leaves.
  6. Serve the tacos with lime wedges for squeezing over the top and garnish with sour cream or Greek yogurt and salsa or hot sauce, if desired. Enjoy!
