Salmon Apple Feta Salad

All our kitchen had to say was “apple and feta” and we knew they made a great salad. The Taylor Farms Apple Feta Salad Kit combines fresh spinach and spring mix with creamy feta cheese, honey-sweetened almonds, and cinnamon-puffed apples. Light, plant-based, sweet-n-salty—it’s kind of perfect as is, but when you need a little more nutritional oomph, like protein and collagen? Just add fresh salmon fillet, baked in olive oil, lemon slices, and dusted in Italian seasoning. Sprinkle on some sunflower seeds for a finishing touch—and indeed, this salad sings of Italy’s Riviera sun!

Ingredients

Seasoning :

  • 2 tbsp olive oil
  • ½  tsp salt
  • ¼ tsp pepper
  • 1 tsp Italian Seasoning
  • 2 Tablespoons sunflower se

Directions

  1. Preheat the oven to 400 degrees.
  2. Pat dry the salmon, drizzle with olive oil, and season with salt, pepper, and Italian seasoning. Top with lemon slices. Bake for 15-18 minutes.
  3. Prepare the contents of the Salad Kit and place portions into plates or bowls.
  4.  Add the salmon on top!
