Shredded BBQ Chicken Salad

  1. Fire up the grill to high heat. While the grill is getting hot, pat the chicken dry and drizzle with olive oil. Season with salt, pepper, paprika, and garlic powder and then coat it with BBQ sauce.
  2. Once the grill is ready, put on the chicken and corn (without husks). Cook the chicken for 30-40 minutes and rotate halfway through. Turn the corn every few minutes until tender.
  3. While the chicken is cooking, cook and drain the black beans and assemble the BBQ Ranch Chopped Kit.
  4. Let the corn cool and the chicken rest for a few minutes. Then slice, cube, or shred the chicken and use a sharp knife to cut the corn kernels off the cob. 
  5. Arrange the BBQ Ranch Salad kit in a bowl or platter and top with the black beans, grilled corn, and the BBQ Chicken.
