Southwest Steak Bowl

A big, juicy, perfectly-seared New York Strip Steak has no problem starring on its own, and it’s always great with classic sides like grilled veggies and garlic mashed potatoes (or mashed cauliflower for a less carby version). But there’s nothing wrong with mixing things up a little, especially when the results are this tasty. 

Our simple, treat-yourself-on-a-weeknight recipe uses the zesty flavors and crisp textures of the Salsa Ranch Chopped Salad Kit combined with corn, snap peas, and colorful rainbow tomatoes to create a hearty salad that uplifts the savory flavors of the New York Strip. And the only cooking you’ll do is with the steak. Is that easy enough for a Tuesday night? We’ll let you be the judge — but don’t feel restricted to just weeknights.

Ingredients

  • 1 Taylor Farms Salsa Ranch Chopped Kit
  • New York Strip Steak (about 1 lb — or any steak you prefer)
  • 1 cup assorted rainbow mini tomatoes
  • 1/2 cup assorted herbs
  • 1/2 cup yellow corn
  • 1/2 cup blanched snap peas

Directions

  1. Slice the tomatoes in half and set them aside. Rinse and pat dry your herbs, then roughly chop or tear them. Shred the corn off the cob, and blanch the snap peas in boiling water for about 1 minute before transferring them to an ice bath to preserve their crispness.
  2. Open the Salsa Ranch Chopped Kit and remove all the components. Set aside the chopped greens, dressing, and any toppings.
  3. Heat a skillet over medium-high heat with a drizzle of oil. Pat the steak dry, then cut it into cubes. Season with salt and pepper, and add the steak to the hot skillet. Brown on all sides, cooking for 2–3 minutes per side or until it reaches your desired doneness. Remove from the heat and let it rest for a moment.
  4. Place the chopped greens from the salad kit into a large bowl. Add the sliced tomatoes, herbs, shredded corn, snap peas, and steak cubes. Drizzle with the included dressing and toss gently until everything is well coated.
  5. Divide the salad into individual plates or enjoy it family-style. Serve immediately for the best flavor and texture!

How Does One Rainbow a Tomato?

Where do you even get rainbow tomatoes? At the end of a rainbow? While that would be nice (and we’re certainly not here to discourage anyone who tries to find out), the truth is these colorful gems are​​ the delightful result of selective breeding and careful cultivation practices aimed at producing multiple colors, sizes, and even flavors. By cross-pollinating heirloom varieties — typically red, yellow, green, and sometimes even purple — growers have developed tomato plants that come in an impressive range of hues. 

To make things even more interesting, these tomatoes tend to have unique taste profiles, ranging from sweet to tangy and everything in between. And, of course, they make your dishes more striking in terms of visual appeal, which is the main reason we love them.
