Here’s a quick recipe to whip up your coleslaw dressing in just a few minutes. You’ll need the following:

  • ½ cup mayonnaise
  • 2 tablespoons white sugar
  • 1 ½ tablespoons lemon juice
  • 1 tablespoon vinegar
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt

Simply whisk it all together, chill in the fridge for 10-30 minutes to let the flavors merge, and you’re all set!

Colcannon: A Classic Irish Favorite

Looking for the ultimate dish to celebrate St. Patrick’s Day? We suggest making colcannon — a traditional Irish dish enjoyed for centuries. Typically made with mashed potatoes, cabbage or kale, butter, and plenty of salt and pepper, this dish has humble origins and was originally a simple, hearty meal made with inexpensive and readily available ingredients.

Today, the humble colcannon remains a popular dish in Ireland and is enjoyed throughout the year. It’s often served as a side dish with meat, such as bacon or ham, and continues to be a comforting and cherished part of Irish cuisine.

Here’s how you can make some to enjoy for St. Patrick’s Day. You will need:

  • 4 large russet potatoes, peeled and quartered
  • Salt
  • 4 Tablespoons unsalted butter
  • 1 large onion, finely chopped
  • 1 package of Taylor Farms shredded cabbage OR 1 package of Taylor Farms chopped kale
  • 1 cup milk
  • Salt and pepper to taste
  • Chopped fresh chives or green onions (optional, for garnish)

Instructions:

  1. Place the potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer until the potatoes are tender, about 20 minutes.
  2. While the potatoes are cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the shredded cabbage or finely chopped kale and continue to cook, stirring occasionally, until the wilted and tender, about 10 minutes. Season with salt and pepper to taste.
  3. Drain the potatoes and return them to the pot. Add the milk and remaining 2 tablespoons of butter. Mash the potatoes until smooth and creamy, adding more milk if necessary to achieve the desired consistency. Season with salt and pepper to taste.
  4. Stir the cabbage mixture into the mashed potatoes until well combined. Taste and adjust seasoning if necessary. Serve hot, garnished with chopped chives or green onions if desired. 
  5. Enjoy your colcannon!
